Fat to Fatter……

A little over a fortnight ago I wrote a post entitled Fat to Fit – The Start of the Jorney about how I was unhappy about my expanding waistline and I started making grand plans to bring the situation under control.  Two weeks later and you’re probably expecting a post on how I’ve lost several pounds, how I’ve been eating more healthily and how I’ve really hit the gym.

Unfortunately I’m going to disappoint!  I’ve been lazy!  In fact I’ve put on 5 lbs – bringing my current weight to 252lbs!

My initial reaction was to blame it on other things rather than face the truth – that I have been LAZY!

Firstly, I could have blamed the lovely teaching staff who presented me with oodles of chocolates, donughts, wine and much more at the end of term for all of my hard work this past year!  But I cannot – their presents were given with the best of intentions and I truly am greatful for them, they didn’t force me to eat a box of Thorntons Premier Chocolates in two days or stuff 5 custard donughts down my throat in an afternoon – NO I did that to myself.

Fat to Fit – The Start of the Journey!

Since I totally quit smoking I’ve noticed my weight slowly creep upwards.  Well, to be more accurate, I’ve noticed my trousers get tighter and tighter!  So today I stepped onto the scales and was not happy at all…

I’ve been on the heavy side for as long as I can really remember and for the last few years I’ve mostly kept my weight around 16.5 stone, give or take a few pounds.  I’ve also told myself that whilst it’s obviously not the most healthy weight for me to be, it’s not all that bad, it could be worse and I wasn’t really that old (I’m currently 33) so there would be plenty of time to loose weight later.

Well guess what?  That day has now come..  Today I weigh in at the “grand” weight of 247lbs (112kg).  At my height of 5′ 10″ that give me a BMI of 35.4, officially making me obese!

It’s now been around 10 weeks since I cut out all smoking (it feels much longer though) and although it was hard it was something that I truly wanted to do, which made it achievable.  I firmly believe that was the key to quiting smoking – I had tried before but I never really, honestly wanted to give up, which is why I’d failed to quit so many times before.

So now it’s time to stop ignoring the problem and face the fat head on…

Normally I wouldn’t consider making a post whilst drunk…

BUT… I’ve just been alerted to a video on YouTube of my MOTHER and Aunty Gaynor,  singing There’s a Hole in my Hat, to the tune (almost) of There’s a Hole in my Bucket.  This was apparently due to an incident with a hat and a candle.  You’ll have to listen to the song for the explanation!

Roast Chicken and Mediterranean Veg!

This has got to be one of my favourite types of recipes.  Simply chuck things into an oven proof dish, bung in the oven and serve with loads of rice and french bread!

roast_chicken_vegetablesThere is no measuring, no weighing and virtually no stress – even those who profess to be unable to cook can make something that tastes great!

I had a pack of chicken legs left in the fridge that weren’t used at a BBQ and couldn’t be bothered to do anything fancy so I grabbed a couple of courgettes, a red, yellow and green pepper, a few small red onions and half a pack of baby plum tomatoes.  If I’d have had any olives, a handful would have gone down a treat too…  A glass of white wine, throw that in too! That’s why I love these kind of recipes – want a hint of garlic?  Throw in a lightly crushed clove or two!  There is no right or wrong way…

To make this work you must weigh nothing, simply cut all of the veg into similar size pieces, drizzle over some olive oil and add some sea salt and plenty of freshly ground pepper, mix and pop in a preheated oven at 375°F/190°C/Gas Mark 5 for roughly an hour.
